Stuffed Chicken Breast in Vegan Vodka Sauce

This recipe is so warm and soothing. I'm usually not a fan of chicken breast. I hate the texture and the flavor is just not there. But I wanted to try something different and chicken thighs are not the best for stuffing, so here we are! This recipe is a delicious take on Italian food. It is very fun to make and is so full of flavor! The stuffing combined with the sauce is what makes this dish so special!



You might be thinking "Ananya, why would you make a VEGAN sauce for a nonvegan dish??" This is a very good question! I wanted to make this recipe easy and usable for everyone! It is a little healthier this way, and the sauce still is super creamy and delicious overall!


If you have never made cashew cream before, it is super easy. Soak your cashews overnight, wash them, and then blend them adding water until you reach your desired consistency.



Substitutions:

Vegetarian: use large portobello mushrooms or bell peppers instead of chicken breast. Stuff them and cook them in the vodka sauce.

Vegan: use vegan cream cheese instead of ricotta cheese and nutritional yeast instead of paprika. Use vegetarian options to replace chicken.


This recipe is gluten-free and the substitutions are super easy and will taste amazing as well!


This recipe is awesome and I hope you make it. It is perfect for a dinner date night, or even a family dinner. Even though the recipe calls for 2 chicken breasts you can add more. ENJOY!
