This recipe has been tested and perfected! The batter is super easy to throw together and the results turn out great each time! I highly recommend making this recipe for friends or family, everyone will be super impressed! Warning: you should double or triple the recipe because they are super addicting!
I don't recommend adding more cheese than the recipe says because more cheese can interfere with the lift and airy feel of the popovers, but even if they don't rise as much they will still taste great, so you do you! If you do add more cheese, add 1-3 tbsp of water to loosen the batter a bit.
Simplified: Popovers get their texture from the water evaporating as they cook and this pushing them up and filling them with air. You want to cook them at a high temp in the beginning so the top cooks before the bottom that way as the bottom cooks, it will push the top up.
Substitutions:
-Buttermilk: use regular milk or milk alternative of your choice/water if vegan
-Cheese: use vegan cheese if vegan
