Single-Serving Pork Katsu Curry

Are you not a fan of the whole meal prep concept? Eating the same thing every day and only having fresh food once a week essentially. It gets boring! I like eating fresh food every day and I know a lot of you guys feel similarly! It might even be one of the reasons why you decide to go get Mcdonald's when you have food in your fridge 😳



This recipe makes a single serving and can be made in 20 minutes! Which is probably less time than it would take for you to go and pick up that fast food you were thinking about. 😉 If you need to make more than one serving, this recipe is easy to double, triple, etc.


This is not a traditional pork katsu curry recipe. The sauce is more like a pan sauce or gravy. It is rich, flavorful, and can be used for many other things as well!


Substitutions:

-Panko breadcrumbs: can use regular breadcrumbs or flour (depending on what you have) follow same steps

-Pork: can use chicken (bone-in chicken thighs preferred), extra firm tofu, or portobello mushrooms (follow the same process but do not need to cover and cook for less time)


This is a lot easier to make than you're probably thinking and it tastes soooo good! The meal is not complete with a side, I eat mine with veggies, like above, or a salad, rice tastes good too. If you eat more, you can increase the servings by doubling the recipe. It is really filling. It's also a great recipe to impress your family or loved ones with! Serve with some lemons and ENJOY!
