Raspberry Cheesecake Rolls

I literally love rolls so much! I like to turn so many things into rolls because they look so beautiful! These rolls are especially beautiful because of the beautiful raspberry pink in the swirls contrasting the pale golden color of the bun. And then with the cream cheese glaze on top, these are literally perfection!




These rolls are so fluffy and soft, and STAY this way! I left one out to see and it was still soft the next day! My secret? One potato! The starch of the potato prevents too much gluten from developing, preventing a chewy or tough texture from forming. Instead, the end results are soft, fluffy, and silky and HEAVENLY!





The cream cheese glaze is a MUST for these rolls. Raspberries have a slight acidity and this acidity pairs well with the sweetness and fattiness of the cream cheese glaze. If desired, you can add more sugar to the raspberry filling and leave out the cream cheese glaze.
