After drooling over birria tacos as they take over the internet, I finally decided to make them! Normally birria is made with goat from what I saw online, along with guajillo chilis, and Mexican oregano. Unfortunately, goat is hard to find and I don't normally have guajillo chilis and Mexican oregano on hand. This recipe uses few ingredients that I think you should always have on hand!
I used pork for this recipe because pork is one of my favorites and it is great for braising. You can replace it with beef or chicken as well.
As for aromatics, I used onions, garlic, and ginger, which in my opinion is a great addition to almost any dish! The spices I used were cumin powder, cinnamon stick, and cloves. These spices, used often in Indian cooking, are great for meat dishes!
I used a can of chipotle peppers because I like the smoky flavor that it provides, and the flavors combine faster than dried chilis since they're already softened.
The best and most unique element to this recipe is....🥁...miso paste! Miso paste is a great addition to almost every recipe. It has a strong umami flavor, that adds an extra element to every dish!
This recipe is so easy to make and is great for meal prepping. It makes a huge quantity and in the fraction of the time birria normally takes to make!
Substitutions:
•Chicken concentrate: use 7 cups of any type of broth instead (leaving out water)
•Pork: can use chicken or beef
•Vegetarian/Vegan: use vegetable broth, and your favorite types of beans (garbanzo, black, kidney...), tofu, eggplant, or mushrooms.
I hope you enjoy this recipe as much as I have! It is so easy to make. If you don't have an instant pot, you can slow cook it for around 3-5 hours instead. ENJOY!
