Miso Honey Fried Eggplant

I have never been a huge fan of eggplant, but when it's fried, it's totally different and tastes great. And then add an amazing sauce on top and it's just *Chef's kiss* This is a great recipe for 2, whether it be for date night or double it and make it for your family! Perfect vegetarian recipe.



If you've seen my other recipes, you know I am obsessed with miso paste. Red miso paste is the best. It's packed with the most flavor! Normally I use miso to just enhance the flavors of the dish, but lately, I have been messing around with centering the dish's flavors around the miso itself, and the results are delicious! You can feel the umami in your mouth and it is so addicting!


If you are vegan, simply replace the honey with the same amount of maple syrup, agave, or brown sugar.


Miso Honey Fried eggplant

Servings: 2| Prep time: 5-10 minutes| Total time: 25 minutes


Ingredients

  • 1 big eggplant

  • 4 tbsp cornstarch

  • Dash salt

  • 2 tbsp red miso paste

  • 2 tbsp honey

  • 1 tbsp minced garlic

  • 2 tbsp chili garlic sauce

  • 2 tbsp water


Directions

  1. Chop the eggplant into 1-inch cubes and coat with cornstarch and salt.

  2. Heat ½-1 cup of canola oil into a pan on medium heat and fry the eggplant for around 10 minutes, or until fully cooked.

  3. Mix miso paste, garlic, chili garlic sauce, and water together in a separate bowl.

  4. If you have a lot of excess oil, drain it until there is only around 1 tbsp remaining.

  5. Add mixed sauce to the eggplant and mix thoroughly.

  6. Serve with rice or any side of your choice and ENJOY!
