Korean Fried Shrimp

This recipe seems complicated, but it really is very easy and comes together very fast. The sauce is so quick to make and the shrimp cook so fast. It will feed 2 people (unless you're very hungry). Serve it with kimchi, rice, lettuce wraps, etc. It is so good! Also would taste really good added to a salad!



Substitutions:

Healthier: instead of frying the shrimp, pan fry them and then mix with sauce.

Vegan: use tofu, mushrooms, eggplant, and coconut oil instead of butter



You know those times when you haven't really eaten anything all day and you're just past the point of hungry and don't feel like eating anything at all? But you know you have to eat something...But nothing seems appetizing...When your days consist mainly of studying at the library, mixed in with small groups and meetings and a sprinkle of exams, it is easy to forget to pack lunch and only have your emergency protein bar to get you through the day. This meal is one I love because even when I don't feel like eating, but know I have to, I can always eat this. Spicy food is something that is easier for me to eat. If your mouth is dry, the spiciness will help trigger you to salivate, making it easier for you to eat. The sauce also helps. When I feel like I can't eat, I have found that eating something with a sauce or curry is easiest. These are super easy to eat and really delicious too!

I highly recommend you make this recipe! You won't be disappointed! It is really easy to double and triple it if you need to serve more people or if you want to meal prep. Reheating is easy, microwave, heat on the pan or in a toaster oven (my favorite way). ENJOY!
