Who doesn't love orange chicken? Eating it straight out of one of those folded to-go containers and watching a Romantic comedy? Did I ever do this? Eh, not so much, but I definitely watched movies of OTHER people doing that and it always made me crave Panda Express and eat is super late at night with one of my roommates and then we would feel like trash the next day. So a solution? Make it yourself! In the time it takes you to go to Panda Express, get your food, come back and actually start eating you could have this made and ready to go! The bonus? It is healthier! You will feel so much better about yourself the next day!
The best part about this orange chicken is that it uses the juice of fresh oranges. Fresh oranges are a great source of vitamin C and what better time to increase your vitamin C intake then during a pandemic? But really, the best thing to supplement your diet with right now is Zinc. Zinc is very important for your immune system and eating chicken is a great way to increase your zinc intake!
Substitutions:
• If vegetarian: use firm tofu and instead of making in oven, make on a pan. Coat tofu with cornstarch and cook in olive oil and then add sauce mixture and let reduce.
• If vegan: use firm tofu and cook the same as the vegetarian option. Leave out oyster sauce and replace with 2 tbsp soy sauce (or 2 tbsp dark soy sauce).
• If in the mood for steak: slice steak meat of your choice thin, coat in cornstarch and cook in olive oil on very high heat. Heat should be very high and once have color remove completely and cook sauce mixture down and once reduced add steak back in.
This recipe is so good when you're in the mood for to-go food but do not want to ruin your diet with fried food.
