Creamy Miso Chicken

With fall in the air (not really but its September now so I'm in the fall mindset), who wouldn't want to eat a nice, cozy and creamy chicken! I personally always love my chicken to have some type of sauce with it, and this sauce is so good! It is packed with flavor from the miso and is literally so simple to make! Try it out, you'll definitely want some once the weather starts to cool down.



For this recipe you can use any chicken you have on hand, I used chicken tenderloins because that is what I had, my preference would be to use boneless and skinless chicken thighs.


This recipe is definitely "well rounded." Like if it was a person, every college would want it! It is so well balanced with the creamy and fattiness from the milk, the acidity from the chili garlic sauce, the umami flavor from the miso, and the smokiness from the smoked gouda.



Miso is personally one of my favorite ingredients, but I think it is an ingredient that tends to scare people because it has a pungent smell and is "foreign territory". Miso is a Japanese ingredient made by fermenting soybeans with salt and other seasonings. The end result is a paste filled with umami flavor and a little bit goes a long way. There are 3 different types of miso pastes: white, yellow, and red. I use red but if you are a beginner I would recommend white or yellow miso. White miso is the least pungent. It is milder, with less umami flavor, but is more forgiving to work with. It still produces an amazing taste and is a great way to start incorporating miso into your daily cooking. Yellow miso is essentially a mix between white and red. It is stronger than white, but milder than red. It is also a good miso to start with! Red miso is the strongest and most pungent. It is packed with umami flavor, and a little goes a LONG way! I definitely recommend you try it out though because it is so good!



Substitutions:

•Vegetarian: Use mushrooms instead of chicken (baby bellas or slice portobello mushrooms would work well)

•Vegan: Use vegetarian options and replace milk with coconut milk and use vegan cheese or leave out cheese.
