Grilling is a great way to get a different flavor from the same meat you've been eating and it is so healthy!
The heat apply to what you cook matters. Cooking meat slowly and on a low heat will make it tender and fall off the bone. A lot of times meat will become stringy when cooked this way. When applying a high heat you allow the amazing maillard reaction to occur. This reaction is what causes a crust to form on steaks and chicken due to the change in interaction between the proteins and sugars of in your desired food. Both are great ways to cook and depends on preference, time and attention span.
Grilling allows for meats to be cooked quickly with high and direct heat, allowing for the maillard reaction to take place. Not to mention it is healthy! With grilling, barely any oil in needed and a lot of excess fat on the meat drips off.
Ingredients:
•canned chipotle peppers in adobo sauce (3 peppers or more depending on desired spice level)
•Lemon juice (3-4 tbs)
•sour cream or greek yogurt for healthy version (1 1/2 cups)
•Salt to taste
•6 chicken thighs (bone-in)
Directions:
Blend the above ingredients together (taste to see if you want more spice, salt or lemon juice). Remove skin from chicken thighs (optional). Mix with the chicken thighs (I like to stab the chicken thighs with a knife to get the marinade to truly penetrate). Let marinate for 4 hours, overnight if possible. Heat grill to 400°F. Spray oil on and grill each side of chicken for 6 minutes each. Cut one chicken thigh and see if fully cooked. Serve with salad, coleslaw, rice, etc. I like to squeeze lemon juice onto the chicken before eating.
