Chinese BBQ Chicken And Roasted Fennel Noodle Soup

Finally, it is starting to feel like fall!!! Took long enough, but we can finally pull out our comfy sweaters and curl up in fuzzy blankets by a fire! And you know what is perfect by a toasty fire? This noodle soup! It is so easy to whip together and is soooo comforting to eat and slurp up!



I love fennel! It has such a unique, almost licorice (but actually good, unlike the candy 😖), like flavor. Fennel consists of 3 parts, and each part offers a different element to the dish! I like the slice the bulb really thin and roasting in the same pan after cooking the chicken for this dish gives it so much flavor with such minimal effort! If you have not tried fennel yet I definitely recommend you give it a try, and what better way than with a comforting noodle soup??


Fennel has several health benefits, it is high in fiber, vitamin C, iron, magnesium, potassium, and calcium. It is definitely a great vegetable to try!

This recipe uses soybean paste. I have recently loved using soybean paste. I have a seasoned one I got from my local Asian grocery store and it is so delicious!! If you do not have soybean paste, however, you can replace it with miso paste as well!


Substitutions:

• Vegetarian/Vegan: Replace chicken with tofu, mushrooms, or other veggies. Marinate in the same method. Replace water and chicken concentrate with 4 cups vegetable broth.

• Not a fan of chicken: use pork or a mild, white fish (like cod).

• Not a fan of fennel 😕 or don't have it on hand: leave out or replace with mushrooms or celery (cook with the same method).

• No soybean paste: replace with miso paste (by now I hope you have this LOL)


This meal I recommend making on a day you require comfort. Maybe a rainy day, or a day you just need some alone time. Make it during your self-care day. Feel the warmth comfort your heart and soul. ENJOY!
