This was a really fun recipe I made for me and my friend when she came over. It is really simple, pretty healthy and can easily be made into a keto friendly recipe!
This is essentially a baked chicken parm recipe, but it is different from a lot of chicken parm recipes. As usual, I like to change things up and add different depths and dimensions to the flavors of the dishes I make. These are small changes, but they take food to the next level.
Meat and cheese, these are the major elements of this dish. Both of them are kind of fatty. What pairs best with fat? ACID! I have discussed this in my shakshuka blog post linked below.
Because fat and acid go so well together, right after pulling the final product out of the oven, I sprinkled on fresh lemon zest. This elevated the dish so much! I definitely recommend doing this!

I recommend making the sauce recipe while the chicken is baking! This will cut down the cooking time.
If wanting to make this keto friendly I recommend using oat flour or almond flour for the chicken. This works for gluten free as well, but for gluten free you could also use corn starch instead of flour!
