Cheesy cauliflower sausage bake

Inspired by baked penne, this recipe will comfort you with its warmth and cheesiness, all while providing you with a TON of protein and nutrients! It takes less than 20 minutes to make, so it is honestly the perfect easy weekday dinner.

With the weather FINALLY beginning to cool down and fall finally being in the air, this recipe is exactly what I want to eat while curled up in a fuzzy blanket, by a nice warm fire, with a cup of hot chocolate, and while watching a good rom-com. It is so flavorful, with bursts of roasted tomatoes, smoothness of all the melted cheese, crunchiness from the bread crumbs, fattiness of the sausage, and barely any taste from the cauliflower! Perfect for picky kids, orrrr picky adults LOL.


This dish is a great combination of flavors. It uses techniques that allow for flavors to layer upon each other, creating a complex and delicious dish. A lot of the things I make I start off with a similar technique that I learned from my mom. Growing up I loved watching my mom cook and learning from her. She taught me how to make Indian food, so it makes sense that a lot of the foods I make would use the techniques required to make Indian food, even if they aren't Indian dishes.



For a lot of the things I make, I start off with caramelizing some onions. This helps bring out their sweetness and I always add some salt to help speed up the process and enhance their flavor. Sometimes I'll add some soy sauce or the sauce that no one can ever pronounce 😉. After the onions have a little color, I'll add a few cloves of minced garlic, because I just love garlic. I add a little more salt to this and let that roast. Then I'll add my spices so they can cook and brown. This brings out such a beautiful flavor and I highly recommend you try it out. This technique can take any seemingly basic dish to the next level. Next time you want to change things up a little, try out this technique.


Substitutions:

- Keto/gluten-free: Replace breadcrumbs with ground-up almonds, pork rinds, cashews, or more parmesan

- Vegetarian: Replace sausage with soft, crumbled tofu. Add 2 tbsp soy sauce.

- Vegan: Replace sausage with soft, crumbled tofu. Add 2 tbsp soy sauce, and replace cheese with vegan mozzarella and parmesan with nutritional yeast.
