Whipped goat cheese? Melted mozzarella? Crispy prosciutto? AND roasted, garlicky tomatoes? All swirled together in a buttery, crumbly, scone-like roll? Could you imagine anything better?
These rolls are so good and so fun to make!! They require no yeast, which in my mind is always a plus lol, and are so flaky and buttery, just so delicious. The combination of the cheeses, mixed with the acidity of the roasted tomatoes and the salty, umaminess from the prosciutto, makes these the perfect treat!
To make vegetarian, simply leave out the prosciutto, they still taste amazing!!!
Tomatoes are in season right now!! If you can use fresh, please do! If not, the diced canned tomatoes would work well as well.
Important note: It is really important to use cold butter in this recipe! Using cold butter and having bits and pieces dispersed around the dough ensures that they melt while the dough bakes, creating some rise and separation in the dough, allowing a flaky texture to develop! This occurs because butter contains some water in it. As the dough bakes, the water evaporates, lifting the dough slightly. The fat is left behind to create and crisp texture as the dough continues to bake.
I personally love drizzling a balsamic reduction on top of the rolls before serving. The balsamic reduction adds a mild sweetness mixed with acidity that increased the complexity of the dish and pairs beautifully with tomatoes, basil, and mozzarella of course.
