Scallops and cheese might sound like an odd combination, but the creaminess of the cheese fondue sauce and delicateness of the scallops pair so well together. The scallops are seasoned lightly, seared, and then covered in fondue.
The fondue sauce is made using a young gruyere cheese, offering sweet and nutty notes that pairs so well with the buttery scallops. Gruyere is an awesome melting cheese. It offers a wonderfully creamy texture and is amazing for fondues, mac and cheese, grilled cheese, and even on its own.
This dish is very luxurious, and I would recommend using it for a special occasion. Scallops, gruyere, and white wine, this dish's ingredients are on the pricier end. For wine, I used pinot grigio and it does not need to be a fancy bottle! I recommend getting the ingredients from a store like Aldi because they have awesome deals and the ingredients will be more affordable.
Substitutions:
•Gruyere: can use swiss cheese (other cheeses will ruin the texture and delicate taste)
•Vegetarian: use king oyster mushrooms, cut to look like scallops.
This dish is so fun to make AND eat. Enjoy it with friends or family. You can even eat it straight from the cast iron pan and dip slices of baguette in the fondue sauce! It is so good! Might I add this is extremely comforting to eat curled up inside while it is cold outside! ENJOY!
