Brownie Cookie Sandwiches

Oh the weather outside is frightful...But the fire...is so delightful...And since we've got no place to goooo....LET'S MAKE BROWNIE COOKIE SANDWICHES!



This is the best holiday treat to make as we wrap up 2021, still coping with the struggles of 2020, hoping that 2022 will be better. While saying that these cookies can make 2022 better is a lot of pressure on a cookie...they can handle it. They are delicious!


The perfect afternoon activity for a day inside. Making these cookies does not take long, as they do not require any rest time, and they're really as simple as just mixing a few key ingredients together! The best part about making these cookies is assembling them into sandwiches. Get your family and friends together, with a variety of different fillings (whipped cream, different ice creams, caramel, fudge, buttercream frosting....) and decorate them together! I think it would be fun to roll the assembled sandwiches around in crushed candy canes, pistachios, mini chocolate chips, or sprinkles!


I filled mine with a vanilla whipped cream, but anything that pairs well with brownies will pair perfectly with these cookies! You can eat them individually as well! If you're trying to gift them to people I recommend filling them with fudge or caramel so nothing melts.



Brownie Cookies

Servings: 12-20 cookies| Prep time: 15 minutes| Total time: 30 minutes

Ingredients

· 1 stick butter

· 1/4 cup brown sugar

· 1/4 cup white sugar

· 1 egg

· 3 tbsp cocoa powder

· 1 tsp apple cider vinegar

· 1 tsp baking soda

· 1 tsp salt

· 1 bar chocolate

· 1/2 cup marshmallow fluff

· 1 3/4 cup flour

Directions

1. Preheat oven to 325F.

2. Whip room temperature butter with brown and white sugar for 5 minutes, or until pale and

fluffy in texture.

3. Add in egg and beat until emulsified with creamed butter and sugar mixture.

4. Whip in marshmallow fluff, cocoa powder, apple cider vinegar, baking soda, and salt.

5. Melt half of the chocolate bar and chop the remaining half. Fold into the mixture along

with flour.

6. Bake for around 10-13 minutes, or until edges are darkened.

7. OPTIONAL: bang on the counter right when removed from the oven to deflate and get

wrinkly cookie tops.
