I posted this recipe a while ago on my Instagram but it is so good it deserves to be posted here. This noodle dish comes together super fast and you can add whatever meat or veggies you want. If I have leftover meat I like to toss it in to add a little protein. Sometimes I'll serve mine with a soft boiled egg because who doesn't love soft boiled eggs? Basically what I am saying is this dish is super versatile and you need to try it!
Substitutions:
-Peanut butter: use any nut butter you would like, it will just change the flavor, if you don't like nut butter replace it with 2 tbsp heavy cream.
-Mirin: 1/2 tbsp brown/white sugar
-Dark soy sauce: 2 tbsp regular soy sauce with 1/2 tsp honey or sugar
Peanut Stir Fry Noodles
Servings: 2-4| Prep time: 5 minutes| Total time: 15 minutes
Ingredients
1 tbsp butter
1 shallot sliced
2-inch ginger minced
4 cloves garlic minced
1/3 cabbage sliced
2 tbsp dark soy sauce
1 tbsp mirin
1 tbsp garlic chili sauce or sriracha
2 tbsp peanut butter
2-4 tbsp “pasta water”
2-4 servings of noodles of your choice
Salt to taste
Herbs (chives, parsley, and basil is what I like to add)
Directions
1. Boil water in pot.
2. Heat 1 tbsp butter in pan to medium and add ginger, garlic, shallot and cabbage. Cook down and let it all brown slightly.
3. Cook noodles in water following the directions for your noodles for length of time.
4. While noodles cook, mix dark soy sauce, mirin, garlic chili sauce, and peanut butter in a bowl.
5. Once noodles are cooked, add them to the pan, add the sauce and a few tbsp of the water until everything is mixed well and glossy.
6. Mix in your herbs and ENJOY! Serve with whatever you would like!
