In college, I used to go to Panda Express pretty often with my friends. Before college, I didn't even know they existed outside airports or malls LOL. They always had deals going on so it was easy to get a few meals worth of food for a good price. But the money adds up and so do the calories so knowing how to make something similar at home is always a win!
Noodles are a staple for me, I make noodles pretty often because they are so easy and comforting to eat, and after a long day of studying and chaos, a comforting meal is always necessary. This meal comes together really fast and is perfect for those of you who don't like soupy noodle dishes.
Substitutions:
•Vegan: replace chicken and shrimp with tofu (marinate and cook same as chicken) and oyster sauce with 1 additional tbsp soy sauce and 1 tbsp agave syrup (or brown sugar).
•No dark soy sauce: replace with 1 tbsp soy sauce mixed with 1 tsp brown sugar
•No oyster sauce: Mix 1 tbsp soy sauce with 1 tbsp honey or brown sugar
TIP:
This makes a lot of noodles, so it is also great for meal prep! To reheat I suggest splashing a little water on top, heating for a minute or more depending on your microwave, and then mixing.
This dish is perfect for long school/work nights! It is so fast and with the leftovers you can easily change it up by putting garlic chili sauce on top, chili oil, or Chinese 5 spice seasoning.
